Clement, the newest dining experience in The Peninsula New York, is thrilled to announce the launch of the new spring dinner menu from Chef de Cuisine Brandon Kida. The new menu showcases the bounty of local spring ingredients such as ramps, heirloom carrots, nettles, rhubarbs and foraged mushrooms, along with regionally sourced proteins including tuna, rabbit, lamb and pork. 

Menu highlights include:

English Peas with Woodlands ham, ricotta and lemon


 Lamb (Elysian Farms) with miso, grilled ramps and rhubarb syrup


 Taste of Spring with green market fruits and vegetables and hazelnut vinaigrette


 Porcelet (Mosefund Farm) with octopus, white beans and chimichurri

The new spring menu is available a la carte, or as a 5-course or 8-course tasting menu with optional wine pairings.

Few chefs bring the farm to the table with the elegance of Chef Kida. After stints at upscale restaurants including Asiate, Lutece and L'Orangerie, Chef Kida spent time at the sustainable Blenheim Hill Farm in upstate NY where he honed his knowledge of local produce and proteins, the producers responsible for them and the ways to utilize the ingredients in his cuisine. For his spring menu, Chef Kida has drawn inspiration from the seasonal ingredients he studied at Blenheim as well as the relationships he has built up with local producers. The result is a menu of flavorful dishes that have been refined with elegant French and Japanese techniques that Chef Kida has developed throughout his career.
