SAVOUR THE FLAVOURS OF THE SEASON AT THE PENINSULA HONG KONG THIS AUTUMN

Embrace the cooler weather and indulge in Gaddi’s and Chesa’s new menus, created around game meats and fresh mushrooms

 

The arrival of autumn heralds the start of cooler weather, cosier clothing and the countdown to the holiday season. For gourmands and foodies alike, it also heralds the beginning of one of the most indulgent periods on the culinary calendar: game season. To celebrate the rich and hearty flavours of the season, two of The Peninsula Hong Kong’s best-loved restaurants – legendary French fine-dining venue Gaddi’s and perennial Swiss favourite Chesa – are launching menus created around the autumnal flavours of game meats and fresh mushrooms.

 

At Gaddi’s, guests can enjoy an elegant take on game season with a sophisticated yet satisfying à la carte menu showcasing four distinctive autumnal dishes prepared with flawless French flair. Available until 30 November 2018, the menu includes Wild boar pâté en croûte with pistachios on a game jelly, Duck and partridge pie with autumn fruits and Roasted grouse garnished with red berries and green Chartreuse sauce.

 

The chefs at Chesa, meanwhile, have drawn inspiration from the abundance of fresh mushrooms and wild game that are typically available in Switzerland in autumn and early winter to present a four-course menu replete with rustic charm. Available from 1 November until 30 December 2018, and priced at HK$ 598*, the menu features an array of authentic Alpine dishes that celebrate the culinary heritage of different Swiss regions.

 

To start, guests can choose between Wild boar terrine wrapped in air-dried bacon with onion marmalade and toasted farmer’s bread, or Forest mushroom filo tart with roasted prawns and arugula salad. Next comes Cream of chestnut mushroom with quail ravioli, followed by a choice of mains: Roasted partridge with celeriac purée, girolles, chestnuts and Madeira sauce; or Pan-seared venison loin with honey-glazed salsify, Brussels sprouts leaves and juniper berry jus. A rich Black Forest roulade with kirsch ice cream and chocolate crumble ends the meal on a delightfully sweet note.
