Revered by guests and gastronomes the world over since opening its doors at The Peninsula Hong Kong in 1953, French fine-dining restaurant Gaddi’s is putting an innovative twist on a cherished Gallic culinary tradition this summer. Following on from the popularity of the restaurant’s recent pressed duck promotion, Chef Xavier Boyer and his team have created a menu that uses the same classic technique to prepare three intriguing pressed lobster dishes. Available during June and July for a minimum of two people, it also offers guests the opportunity to choose between Boston or Brittany lobsters.
The menu begins on a light and fresh note courtesy of a claw salad with tomato jelly, avocado slices on a young sprout salad. The second course, which is cooked and plated tableside, comprises lobster tail simmered with pressed lobster head sauce with tarragon and herb gnocchi, while the third course features claw and meat custard, lemongrass sabayon served with a claw donut. For all courses, the lobster is prepared using a one-of-a-kind antique sterling silver duck press created exclusively by Christofle and bearing the coat of arms of The Hongkong and Shanghai Hotels, Limited.
Priced at HK$ 2,200* for two blue Brittany lobsters (serves two) or HK$ 1,800* for two Boston lobsters (serves two), the menu is available at Gaddi’s during June and July only. The pressed lobster menu is the latest expression of Chef Boyer’s “modern classic” cooking philosophy. The well-travelled chef, who previously held senior roles at L’Atelier de Joël Robuchon restaurants in Paris, London, New York and Taipei, as well as at famed Le Cinq at Four Seasons Georges V in Paris, is renowned for his deceptively simple approach to classic French cooking, in which he allows the carefully selected flavours in each dish to shine through with minimal distraction.
